Recipe from local Resident Amanda Martin- Recipe name ” Amanda’s Bomb Carrot Cake”. Amanda’s carrot cake is the stuff of legends in Grand Valley!
Recipe for Carrot Cake with Cream Cheese Frosting
2 cups Flour
1/2 cup White Sugar
2 tsp Baking Powder
1 tsp Baking Soda
1.5 tsp Cinnamon
1/2 tsp Ground Ginger
1/4tsp Ground Nutmeg
1/2 tsp Salt
1.5 cup Brown Sugar
1 tsp Vanilla
3/4 cups oil (we used olive oil but I think vegetable is the intended oil for this recipe)
4 Large Eggs
1/2 cup Apple Sauce
3 cups grated Carrots
Add all dry ingredients into one bowl and mix, add all wet ingredients into another bowl and mix. Add dry ingredients to wet ingredients and mix well. Butter a bundt pan ( we used a silicone bundt pan and it worked well). Bake at 350 for 50-60 Minutes.
Cream Cheese Frosting
We had a recording issue so we missed recording the ingredients for the frosting but you can find them below.
1 cup cream cheese
1/2 cup butter
Cream the above 2 ingredients together, then add in and mix ingredients below
2 cups powdered sugar (icing sugar)
1 tsp Vanilla
